Chef Flo Chauvet was born and raised in France, where she attended culinary school. She began her restaurant career in Paris and held posts in London and Amsterdam before moving across the pond to The Westin Hotel in Key Largo, Florida. Flo worked her way through the ranks at various hotels and ultimately landed at the Dallas Convention Center, where she served as executive sous chef.
In summer 2014, Flo left the corporate world to spin a French twist into the Dallas food truck scene. Her unique crepes, sandwiches and pomme frites are made with the highest quality ingredients and are inspired by the dishes that her Mam made for her.
